Chicken Biscuit Casserole Recipe

Ingredients

   1/4 cup butter
   2 cloves garlic, minced
   1/2 cup chopped onion
   1/2 cup chopped celery
   1/2 cup chopped baby carrots
   1/2 cup all-purpose flour
   2 teaspoons white sugar
   1 teaspoon salt
   1 teaspoon dried basil
   1/2 teaspoon ground black pepper
   4 cups chicken broth
   1 (10 ounce) can peas, drained
   4 cups diced, cooked chicken meat
   
   2 cups buttermilk baking mix
   2 teaspoons dried basil
   2/3 cup milk
Directions for Chicken Biscuit Casserole Recipe

- Turn oven on to 350 Degrees
- In a pan, saute the garlic, onion, celery, and carrots
- Mix in the flour, sugar, salt, basil, and pepper
- Add the broth and bring to a boil
- Reduce heat and stir in peas
- Add chicken and simmer for 4-5 minutes
- In a bowl, mix together the baking mix, basil, and milk to form a dough
- Make 6-8 balls out of the dough
- Flatten the balls to make a circular shape
- Pour the chicken mixture into the casserole dish
- Top with the dough
- Bake for 35 minutes



Try this chicken biscuit casserole recipe with mashed potoatoes on top in lieu of the biscuits called for (i.e. like a chicken shepherd's pie). I got this idea from Rachel Ray. Absolutely delicious casserole recipe.
