Chicken and Asparagus Casserole Recipe


1 (8 ounce) package egg noodles
1 1/3 tablespoons olive oil
1 onion, chopped
1 cup chopped, cooked chicken meat
1 red bell pepper, chopped
2 stalks celery, chopped
1 cup chicken stock
1 1/2 cups sour cream
1/2 teaspoon dried oregano
1 pound fresh asparagus, trimmed and cut into 2 inch pieces
8 tablespoons grated Parmesan cheese, divide
Directions for Chicken and Asparagus Casserole Recipe

- Turn oven on to 350 Degrees
- In a pot, cook the noodles. Drain
- In a pan saute the onions
- Add in the chicken, bell pepper, celery, and chicken stock
- Bring to a boil and simmer: adding in the sour cream and oregano
- Add half the chicken mixture into casserole dish
- Layer on asparagus, noodles, and remaining chicken into casserole dish
- Top with Parmesan Cheese
- Bake for 30 minutes

Everyone loved this chicken and asparagus casserole recipe. It did take a bit time to prepare the dish but well worth it. I made it a little easier by just mixing the sauce with the noodles and pouring it into the casserole dish

Chicken and Asparagus Casserole

2 boneless skinless chicken breast halves, cut into 1-inch cubes
2 lbs fresh asparagus, cut into 1-inch pieces & blanched
1 (10 3/4 ounce) can cream soup
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon curry powder
1 cup shredded cheese

- Turn oven on to 350 degrees
- In a pan, saute the chicken: season with pepper
- In a casserole dish, add the chicken and asparagus
- In a bowl, mix together the soup, mayo, curry powder, and sour cream
- Add soup mixture into casserole dish
- Bake for 25 mintes
- Top with cheese and bake for 5 more minutes
