Mexican Zucchini Casserole Recipe

9 medium zucchini
1 pound processed American cheese (regular or Mexican flavor)
2 tablespoons minced onions
1 cube butter
Ritz cracker crumbs (20 crackers)
1 can Mexican tomatoes with green chilies, diced
Directions for Mexican Zucchini Casserole Recipe
- Turn oven on to 350 degrees
- Slice the squash and simmer in water
- Add in onions and cooked until steamed but firm
- In a casserole dish, add in the squash, sliced butter, and cheese
- Add in mexican tomatoes with green chilies
- Top the zucchini casserole with crushed up bread crumbs
- Bake 45 minutes.

A delightful side or, in larger portions, main mexican zucchini casserole recipe dish. I always add in some jalapenos and pepper flakes.
