Vegetarian Pasta Casserole Recipe

   1 (16 ounce) package penne pasta
   2 cups chopped broccoli
   1 cup sliced mushrooms
   1 cup chopped green bell pepper
   1 tablespoon butter
   1 onion, chopped
   1 clove garlic, minced
   1/4 cup all-purpose flour
   4 cups nonfat milk
   1/2 cup grated Parmesan cheese
   salt and pepper to taste
   5 tablespoons chopped fresh basil, divided
   1/3 cup dry bread crumbs
   2 tablespoons grated Parmesan cheese
   1 butter flavored cooking spray
Directions for Vegetarian Pasta Casserole Recipe
- Turn oven on to 350 degrees
- Cook the pasta following directions
- Mix in the broccoli, mushrooms, and green peppers
- In a pan, saute the onions and garlic
- Mix in the flour and milk
- Remove from heat and top with 1/2 cup of parmesan cheese, salt, and pepper
- Combine both mixtures and add to casserole dish
- Top bread crumbs, basil, and parmesan cheese
- Bake for 30 minutes

I adapted this vegetarian pasta casserole recipe to my taste. I used whatever vegetables I had left over or in the house. I even threw in some frozen peas and corn
