Spaghetti Pie Casserole Recipe

•6 ounces of uncooked spaghetti
•2 eggs, lightly beaten
•1/4 cup grated Parmesan cheese
•1 pound lean ground beef
•1 small onion, chopped
•8 ounces sliced mushrooms
•1 jar (approximately 16 ounces) spaghetti sauce
•1 can (11 to 15 ounces) whole kernel corn, drained
•1 green bell pepper, cut in rings
•1 cup shredded mozzarella cheese

Directions for Spaghetti Pie Casserole Recipe

- Turn oven on to 350 degrees
- Cook the Spaghetti following package directions
- In a large bowl, mix together the spaghetti, eggs, and parmesan cheese
- Add the spaghetti mixture into a pie dish
- In a pan, cook the ground beef until browned
- Add in the onions and mushrooms until tender
- Stir the ground beef into the casserole pie dish
- Top with bell peppers and cheese
- Bake for 30 minutes

This Spaghetti Pie Casserole Recipe is comfort food, Cooking Light style. Nothing gourmet, but it tastes great. I often substitute veggie crumbles for the ground beef, which makes it a bit more dry, but works pretty well otherwise.
