Ranchero Mexican Casserole Recipe

Ingredients
1 1/2 pounds ground beef
1 medium onion, diced
1 can creamed corn
1 (10 1/2 oz.) Mexican tomatoes with green chilies
1 (8 oz.) can enchilada sauce
8 oz. grated cheddar cheese
1 (4 oz.) can sliced black olives
8 large corn tortillas
1 cup grated Jack cheese
1 can diced green chilies
Oregano, cumin, garlic powder, and chili powder to taste
Directions for Ranchero Mexican Casserole Recipe
- Turn oven on to 325 degrees
- In a pan, cook the ground beef until browned
- Add in the onions, tomatoes, corn, enchilada sauce, green chilies and tomato, cheddar cheese, diced green chilies, black olives, and spices
- In a casserole dish, add in the 4 torn corn tortillas
- Add in half of the ground beef mixture
- Add in remaining corn tortillas
- Add remaining meat mixture
- Top with jack chese
- Bake for 30 minutes

Yummy! This ranchero mexican casserole recipe is very good and the whole family devoured it! I did make a couple changes as I'm not a huge fan of spicy food. Would definitely make this casserole recipe again.
