Italian Veal Casserole Recipe

1 tablespoon oil
350 g (12 oz) lean veal, cubed
1 clove garlic, crushed
1 small onion, sliced
1/2 green pepper, cored, seeded and chopped
125 g (4 oz) tomatoes, skinned and chopped
200 ml (1/3 pint) light stock
Salt and pepper
1 bouquet garni
Chopped parsley to garnish

Directions for Italian Veal Casserole Recipe
- Turn oven on to 350 degrees
- In a pan, cook the veal until browned
- Add in the onions and garlic until tender
- Mix in the pepper, stock, tomatoes, and salt, and green peppers
- Pour the meat mixture into a casserole dish
- Bake for 1 hour 30 minutes
