Hispanic Casserole Recipe

1 pound ground sirloin (very lean)
1 cup chopped yellow onion
1 15-ounce can black beans, drained and rinsed
½ cup chopped red or green bell pepper
¼ cup diced green chile peppers (optional)
Nonstick cooking spray
6 reduced-fat flour tortillas
½ to ¾ cup salsa
6 ounces reduced-fat sharp cheddar cheese, grated
½ cup nonfat sour cream
Directions for Hispanic Casserole Recipe
- Turn your oven on to 450 degrees
- In a pan cook the beef until browned
- Mix in the beans and both red and green bell peppers
- In a casserole dish, add two tortillas
- Next add in salsa, third of the beef mixture, and third of the cheese
- Repeate layering
- Cook for 10 minutes
