Chili Relleno Casserole Recipe

3 small cans whole chilies, seeded
2 cups cheddar cheese, grated
2 cups Jack cheese, grated
4 eggs
2/3 cup evaporated milk
2 tablespoon flour
1 pound ground beef, cooked and drained
8 oz. can tomato sauce
Salt and pepper to taste
Directions for Chili Relleno Casserole Recipe
- Turn oven on to 350 degrees
- In a casserole dish, flatten half the chilies
- Top with 1 cup of cheddar cheese and 1 cup of jack cheese
- Add 1/2 of the ground beef and repeat layers
- In a bowl, mix together the milk, eggs, salt, pepper, and flour
- Pour over the meat mixture
- Bake for 35 minutes

Delicious! You can prepare this chili relleno casserole ahead of time, then pop it in the oven when you're ready for dinner. I used enchilada sauce instead of tomato sauce for a little extra spice
